Favorite Weekday Lunch: Trout Toast

When I worked downtown, I used to order this at least twice a week. I fell in love with it so hard–that I had to recreate it at home.

Trout toast is one of my favorite things. The combination of salty trout with creamy hummus and crisp sourdough bread is one that my taste buds lust after on a daily basis. I’ve jazzed up this toast with a little fresh cucumber, onion and fresh parsley for a slight earthy bite to complement the salt from the flaky trout. A few of my other additions include fresh tomatoes, pickled onions, thinly sliced celery and even a squeeze of fresh lemon.

Ingredients
sourdough bread, toasted
1/3 cup smoked trout
1 tbsp hummus
handfull sliced cucumbers
pinch of sliced onions
garnished with fresh parsley
squeeze of lemon
pinch of everything but the bagel seasoning

While the bread toasts, gently flake the trout so that you get thin, small pieces.

Slice the onions and cucumber.

Chop the parsley.

Assemble–first I spread the hummus on the toast, and sprinkle with everything but the bagel seasoning. Next, I layer the cucumbers followed by the trout, onion and parsley. Squeeze lemon over the top.
