My Weekly Power Bowl

This bowl is so easy I hesitate to even call it a recipe. It’s more so just throwing amazing, beautiful, delicious ingredients into a bowl.

I always crave nourishing weekly lunches that are lighter but still filling and satisfying. This bowl can essentially be remixed any way you’d like. Here’s how I prefer it!

Ingredients
Base of romaine lettuce, chopped
Pea shoots
Cucumber, skin removed and dusted w/ paprika (amazing combo)
Roasted chickpeas (recipe here)
Roasted sweet potatoes
Avocado
Pickled onion

Dressing (optional)
1 tbsp greek yogurt
1 tsp freshly chopped dill
1/2 lemon
1/2 tsp olive oil
salt and pepper to taste
