The Reset Salad
Every so often, I get into a lunch slump. I’m not sure if “lunch slump” is a known term–but it should be. It’s essentially where I’ve exhausted all of my on-hand lunch ideas to the point of no return. Nothing will sound exciting or yummy–and everything just seems “boring”. Insert the reset salad here. Nothing helps a slump like a good old reset. I just created this delish stunner a few days ago–born out of a lunch slump, but also from a need to insert more clean eats in my day-to-day.
I call this the reset salad because it is so packed full of amazing ingredients that it really does kickstart your body into healthy-drive. Parsley is such an underdog in the salad world–it packs tons of antioxidants into its tiny leaves and is amazing for digestion. I love adding parsley anywhere I can in my cooking–from smoothies to salads!
Ingredients
Hand full spinach, chopped
handfull parsley, chopped
1/4 onion
1/2 large cucumber
1/4 heirloom tomato (or cherry tomatoes will work just fine)
1/2 small avocado, cut into cubes
1/4 cup grain of choice (I used a rice medley)
pinch of salt and lemon pepper
drizzle of olive oil
drizzle of champagne vinegar
optional: chopped nut of choice for a little crunch (I love almonds here), spoonful tzatziki
Chop all of the veggies roughly–I like a lot of texture in my salads so you don’t have to worry about being perfect here.
Combine all ingredients in a giant bowl and mix.
If using tzatziki, mix in and then top with nuts.
