Loaded Red Pepper Hummus

This is an all-time favorite in our house. I swear by homemade hummus over store-bought. It’s so much more flavorful–and downright easy to make.

When I discovered how easy hummus is–I began to make it a semi-weekly recipe. It stores in the fridge for a few days, making it a perfect grab-and-go snack with veggies or pita. I’ve tinkered with adding different types of flavors and ingredients–such as half garbanzo half navy beans for a different texture and level of creaminess.

You can really play around with this recipe all you want! The main showstopper here is the red pepper drizzle–it’s SO flavorful and my favorite part. Serve with toasted pita or your favorite veggies. Enjoy!

Ingredients
1 can garbanzo beans
1/2 tsp cumin
1 can white navy beans
1 red bell pepper
3 cloves garlic, chopped
3 tbsp olive oil
1 tsp hot red pepper flakes
1/4 roasted pine nuts
1 tsp salt
1/2 tsp pepper
juice of 1/2 a lemon
1/4 cup feta, plus more for garnish
hand full fresh parsley, chopped

Start by preheating the oven to 400 degrees.

In a small baking sheet lined with parchment, add 1/2 a can of drained garbanzo beans. Set the other half aside. Toss the beans with the cumin and roast for 20 minutes or until golden brown.

In a medium sauté pan, heat 2 tbsp of olive oil.

Chop the red bell pepper into small cuts and add to the olive oil. Gently sauté the peppers making sure they’re immersed in plenty of olive oil the entire time. Cook for 10 minutes, adding the red pepper flakes. Then add 2 cloves of chopped garlic and remove from the heat. Set aside.

In a blender or cuisinart (I prefer a cuisinart for this) add: the remaining garbanzo beans, navy beans, 1 clove garlic, 1 tbsp olive oil, feta, salt, pepper and lemon. Mix on high until smooth, thick and creamy.

On a serving platter or bowl, dish out the hummus. Drizzle the red peppers and oil over the top, garnishing with feta, pine nuts and parsley–finishing with those roasted garbanzo beans from the oven. You can top with additional salt, pepper or added red pepper flakes if you’re looking for even more heat!
