Easiest Weeknight Pesto
Is there anything better than fresh homemade pesto on a weeknight? This is a rotating staple in our house during the summer months.
One of the many things I love about this recipe is how easy it is. It’s also extremely flexible as well, I love mixing up the ingredients ever so slightly and experimenting with the flavors.
Making this on a weeknight is so easy - I just throw all the ingredients in a food processor and mix! We have pesto usually every week during the summer months, it’s the best to throw into salad dressings, over pasta, or as a sauce in a quinoa veggie bowl.
Ingredients
1 head of fresh basil leaves
Large handful of fresh spinach
2 cloves garlic
1/4 cup cashews
1/2 cup EVOO
2 tbsp water
1/4 tsp garlic salt
Salt and pepper to taste
Mix
Blend all ingredients on high in a food processor or Vitamix.
Presto! Store in the fridge for 2 days or serve immediately. Enjoy!
