Easy Summer Salad Recipe

There is something about this salad that transports me directly to a beach on the Italian coast. With one of the foggiest months in the city upon us - this is definitely a weekly favorite in our house.

Each week I try to go to the local farmers market and gather a handful of fresh, seasonal fruits and veggies. It’s been one of my favorite weekend traditions, and is even more a favorite during the summer months when practically everything is in season.

This recipe was born from having a bounty of fresh heirloom tomato, corn, basil and cucumber in our kitchen. I thought that the perfect way to combine all these flavors would be in a fresh hearty salad. Heirloom tomatoes are so lush this time of year, and paired with the bright bursts of corn and basil they simply come alive! I love serving this salad as a side or as a main - it’s that delish! And added bonus, it lasts in the fridge for a day or so.

Ingredients
3 heirloom tomatoes
2 ears fresh corn
1/2 cup fresh basil
1/2 red onion
1 cucumber
1/2 cup fresh mozzarella
2 tbsp EVOO
salt and pepper to taste

Chop
All ingredients and toss together with salt, pepper and 1-2 tbsp of olive oil.
