Nourishing Fall Oats With Apple & Lemon Zest

There is something about fall mornings that just call for sautéed apples with cinnamon, nutmeg and a hint of lemon. It fills the house with such a wonderful aroma. I love making these oats for breakfast because it’s such a nourishing way to start the day.

Oats have always been a go-to for me in the mornings. I love that the possibilities with oats are practically endless, you can mix and match in different ingredients to your hearts content. I tend to sneak in healthy fats, proteins and sometimes even hidden veggies! This recipe however has recently become a favorite for brisker fall mornings.

An ideal Saturday morning for us starts with an early walk around the neighborhood with Millie, followed by returning home to a fresh pot of coffee, cozy loungewear, some jazz, a good book and a bowl of these delicious oats. I love burning this candle too - its scent just transports me into fall!

Ingredients
1/2 cup organic oats
1 organic apple, I love honeycrisp
1 tbsp coconut oil
zest of one lemon
juice of half a lemon
1/2 tsp vanilla extract
2 tbsp maple syrup
1 tsp pumpkin pie spice
1 tbsp chia seeds
1 scoop collagen peptides
1 tbsp cocoanut butter
1 tsp nut butter
1/4 cup favorite rawnola or granola
pinch of sea salt


Over the stovetop, cook your oats by combining water and oats together for about 20 minutes or until they become soft and gooey. You can also cook them in the microwave with a few splashes of water.

Next, chop the apple into rough cuts. Start by removing the core and then making slices.

On the stove, heat a non-stick pan with the coconut oil. Toss the chopped apple in with the heated coconut oil and sauté until lightly cooked. Add the zest and juice of half a lemon, vanilla, maple syrup, and pumpkin pie spice. Stir until well combined and coated around the apples. Let simmer for about 5-8 minutes. Be careful, because if your heat is too high this mixture will burn easily, so keep an eye on it as it cooks.

Remove the apples from the heat. Mix the collagen peptides and chia seeds into your cooked oats. Then top with cooked apples, cocoanut butter, remaining maple syrup, nut butter and granola of your choice! Finish with a dusting of lemon zest and sea salt. Enjoy!
