Garlic Herb Cauliflower Head

Cauliflower seems to be having a moment. Cauliflower mash, pizza crust, polenta, and even cookies are gracing the presence of trendy eateries everywhere. But for me - I'm a die hard lover of cauliflower as nature intended - as cauliflower. 

This recipe is super easy and fun to make for a dinner party because its presentation is simply beautiful. I made it with all of my favorite things - olive oil, parsley and of course garlic. 

Rinse the whole head of cauliflower. Fill a medium sized pot about half way with water and place the head inside the water. Cover with a lid and bring simmer for about 15 minutes or until a fork can pierce the head of the cauliflower. Chop garlic and parsley and set aside. Remove head from water and place onto a greased baking sheet. Drizzle with olive oil and sprinkle with chopped garlic and parsley. Season with salt, pepper, and any other of your favorite seasonings (I love Everyday Seasoning by Trader Joes). You can also add freshly grated parmesan cheese to the top for an added pop of flavor! Bake for about 30 minutes until the whole head gets a nice golden crisp. 

You can serve immediately or store in the fridge for your weekly veggie for 4-5 days. 

1 head organic cauliflower
2 TBSP olive oil
3 cloves garlic
2 TBSP parsley
pinch of salt and pepper + seasonings of your choice
