Spelt Pancakes with Coconut Butter Glaze

I’ve been craving pancakes for a few weeks now. I don’t know what it is, but maybe its the turning of the season - something about fall calls for heaping stacks of pancakes and a cup of jo. For these pancakes I used spelt flour. Spelt flour is in the wheat family and contains small amounts of gluten. However spelt flour can be easier to digest as it requires fewer fertilizers than wheat and also contains many healthy compounds that does the body good. Spelt is an immunity booster, protein source, and is packed with fiber.

You’ll rarely find me putting any syrup on my pancakes, as I’m much more of a fruit or nut spread type of gal. I thought I’d pair these with some fresh strawberries and melted coconut butter - I love coconut butter because it creates such a great glaze and binder. This recipe is super easy and quick to whip up on any weekend (or weekday!) morning. Enjoy!


For the Pancakes
2 cups spelt flour
4 tsp baking powder
Pinch of salt
1 tbsp cinnamon
2 eggs
1 ⅓ cup almond milk
½ tsp vanilla extract

For the Icing and Berries
2 tbsp coconut butter
Organic Strawberries (or any berry of your choosing for topping)


Mix the flour, baking powder, salt and cinnamon together in a large bowl.

Mix the eggs and almond milk and vanilla in a separate medium sized bowl.

Add the almond milk mixture to the flour mixture and stir to combine.

Heat a non-stick skillet with any butter/oil of your choosing (I like to use organic coconut oil spray).

Use a large spoon to make small to medium sized pancakes in the middle of the heated pan. You may need to spread the batter with the back of the spoon if you like your pancakes a little larger. Cook for about 3 minutes per side or until they start to hold a solid form and turn a nice golden color. Measure about 1-2 tablespoons of coconut butter and microwave for a minute or until the mixture becomes smooth and runny. In the meantime, wash and slice berries of your choice and sprinkle over pancakes. Drizzle the warm coconut butter over pancakes and berries to your heart's desire. Fin!!
