Gin Cucumber Mint Cocktail

This is one of my favorite cocktails to make on a sunny afternoon. It’s so incredibly refreshing and an all-around crowd pleaser. Gin definitely works best with this recipe, however you can also sub your favorite alcohol instead. Sometimes we add a dash of freshly juiced cucumber too!

Makes two.

Ingredients
juice of one large lime
2 oz St. Germain
2 oz gin
4 oz lime sparkling water
1/4 cucumber
hand full ice
pinch of mint

Directions
In a shaker combine ice cubes, about half the cucumber chopped into cubes, lime juice, mint, St. Germain, and gin. Shake until chilled.

Pour into glasses and top with sparkling water. Garnish with thinly sliced cucumber and a sprig of mint.

* pro tip, after pouring the alcohol mixture into your two glasses, add the sparkling lime water into the shaker along with the leftover ice, cucumber and mint. Swirl for a few seconds to get the flavors together and chilled even more before pouring onto the gin cocktail.
