Chickpea Salad Pitas

A clean and easy go-to when I need a quick lunch or dinner! I love that the ingredients in here are simple, affordable and easy to keep on hand.

Ingredients
1 can chickpeas
1/2 onion
1 stalk celery
1 pinch fresh mint
juice of 1/2 lemon
pinch of hemp seeds (for extra protein!)
1 whole wheat pita
hand full lettuce, chopped
tomato slices

Dressing
juice of 1/2 lemon
1 tbsp olive oil
1/2 tbsp white wine vinegar
salt and pepper to taste
pinch of garlic salt
1 tbsp dill relish
1 tsp mustard

Chop all the veggies and add to a medium mixing bowl. I like to chop the chickpeas too–or mashing them in the bowl will work too!

Combine all the ingredients for the dressing in a small bowl, mix and then toss over the chickpea mixture.

Next, dress up your pita! I like to cut the pita in half, and then toast it so that the edges become crispy and hold the mixture more firmly. I add lettuce, then the chickpea mixture, tomato slices and then repeat in layers until the pita is full!
