Creamy Pasta With Heirloom Tomato Sauce

If I had a favorite easy homemade tomato sauce, this would be it. You can throw it together with just a few simple ingredients and it’ll taste amazing.

Ingredients
2 cups cherry tomatoes, halved
1 small yellow onion
1 small shallot
3 cloves garlic
juice of half a lemon
zest of half a lemon
2 tbsp butter
2 tbsp olive oil
3 tbsp cream of choice
1 tsp hot pepper flakes
salt & pepper for taste
favorite pasta, I used spaghetti

Heat a medium sauté pan with olive oil.

Chop the onions, shallot and garlic and sauté together. Next, chop the cherry tomatoes in half and then add to the pan.

Cook together until everything is just soft and the tomatoes begin to break down. Add the lemon juice and butter.

Cook the pasta, saving about a cup of pasta water to add to the sauce. Drain the noodles and let them rest while the sauce finishes.

To the sauce, add the cream. I used half and half. Season with pepper flakes, salt, pepper and lemon zest. Add the pasta water and about 2/3 of the noodles to the sauce, stir together so all noodles are coated.

Serve, and garnish with parmesan, toasted breadcrumbs, and/or parsley.
