Thai Inspired Veggie Soba Noodles

An easy, fast, and delicious weeknight favorite. I usually make this recipe with whatever I have left in the fridge at the end of the week. I’ll throw pretty much any veggie in there and its delish!

Each week I head to the farmers market to pick up a bushel of fresh veggies. I love making recipes with them throughout the week – and it’s so nice to have organic produce ready and waiting for you in the fridge when you get home.

Sometimes, when I have a bounty of veggies and NO idea what to do with them (usually by the end of the week my creative juices for cooking are a bit shot) I turn to this recipe. Its easy and super quick to throw together in a pinch.

Ingredients
2 tbsp toasted sesame oil
1 tbsp olive oil
1 yellow onion
3 cloves garlic
2 small red bell peppers
1 head broccoli, chopped
6 leaves kale ( I use lacinato)
pinch of salt and pepper
1/4 cup tamari (can also sub soy sauce)
1 pack organic soba noodles
1/4 cup fresh cilantro
pinch everything but the bagel seasoning
splash of lime juice

Heat 6 cups of water on the stove in a large pot on high heat.

Sauté the onion and garlic together with the oils. Chop the bell pepper into thin strips (think julienne strips). Then add to the mixture along with the chopped broccoli.

When the water comes to a boil, add the soba noodles and stir constantly. Lower the heat to medium. Cook the noodles for about 6 minutes – or follow the directions on your package. Soba noodles can be a bit sensitive – so be sure to monitor them as they cook so they don’t stick together forming a messy clump.

While the noodles boil, chop the kale and stir it into the veggie mixture. Cover and cook for about 3 minutes. Add salt, pepper, and tamari and stir until the veggies are fully coated. Remove from heat.

Strain the noodles, running cold water run over them to rinse. Bring your soba noodles back to the large pot with a splash of toasted sesame oil. Add the veggie mixture over the noodles and stir.

Plate each portion with a few shakes of EBTB seasoning and a few sprigs of cilantro. Finish with a splash of fresh lime juice. Serve immediately and enjoy!
