Peach Cardamom Almond Cake
1.5 cups almond flour
2 tsp baking powder
1 tbsp cardamom
1/3 cup olive oil
1/2 cup coconut sugar
3 eggs
1/4 greek yogurt
1 tsp vanilla extract
1 tsp lemon zest
1 large peach
1 tsp arrowroot powder
Juice of 1/2 lemon
Preheat oven to 350.
Spray a lined spring-form pan with cooking oil and set aside.
In a large mixing bowl, add all the dry ingredients. Gently mix to combine.
In a medium mixing bowl, add all the wet ingredients, whisking to combine.
Slowly pour the wet ingredients into the dry.
Mix batter gently to combine.
Pour batter into the baking dish.
Wash and slice your peach. You’ll want thin slices, a little less than a 1/4 inch thick. Add them to a medium mixing bowl. Add the arrowroot and lemon, gently tossing to coat.
Once coated, arrange on top of your cake batter however you’d like.
Bake for about 40-45 minutes or until golden and you can smell peaches and cardamom!
