Sweet Potato Pumpkin Pie

Not all pumpkin pies are created equal.

Okay maybe they are…in theory.

Pumpkin pies are SO DARN EASY to whip up. It’s a one bowl and done type of deal. Unless in this case…is a one blender and then done! This is seriously the easist recipe if you’re looking for a quick “I made it from scratch” recipe to impress your friends and fam.

Ingredients
3/4 cups pumpkin
2/4 cups mashed sweet potato
2/3 cup maple syrup
1 tsp vanilla extract
1/2 tsp salt
1/2 tsp cinnamon
1/4 tsp fresh nutmeg
3 eggs
1 cup coconut sweetened condensed cream

Preheat oven to 375.

Combine all the ingredients in a blender and blend on high until smooth. Pour out onto a pie shell (see here for the recipe).

Bake at 375 for 1 hour, turning halfway through to assure even browning.
