Simple Caprese Salad

I love California. It’s May, and we are lucky enough to have heirloom tomatoes already. One of my favorite recipes of all time is a simple caprese with heirloom tomatoes, basil, mozzarella and olive oil. It’s a stunning, easy and flavorful recipe that will transport you right to the Italian countryside (or rolling hills of Northern California).

Ingredients
2 heirloom tomatoes
1/2 cup fresh mozzarella
a few sprigs of fresh basil
1/4 c red onion (optional)
salt + pep for taste

Slice the tomatoes into flat slices.

Using the same tactic, slide the mozzarella or simply pull it apart.

Chop the fresh basil into thin cuts.

Thinly slice the onion.

Plate everything together starting with a drizzle of olive oil on the plate, followed by the tomatoes, mozzarella, basil, onion, salt and pepper. Drizzle with olive oil and serve immediately. Enjoy!
