Pea Shoot & Arugula Veggie Hummus Toast With Pesto Drizzle

Never underestimate the power of toast.

Have you ever created a delicious salad and then just thrown it on top of toast? Well that is basically how this was born. I had a slew of beautiful fresh veggies in my fridge so I wanted to have them be front and center here – but with a few hidden flavor pops.

Its simple, easy and SO darn good. You can easily sub in your favorite veggies or proteins here too!

Ingredients
Hand full of arugula and pea shoots
Pesto-vinaigrette (olive oil, lemon juice, 1 tbsp pesto, drizzle of white wine vinegar)
Sliced cucumber
Sliced tomato
Your favorite hummus or protein
Freshly grated parmesan for garnish
Favorite bread, I used a sourdough loaf

Start by washing your greens. I then made a simple pesto-vinaigrette and tossed them together before adding to the toast.

Slice the tomato and cucumber while your bread is lightly toasting. Then, smear the hummus on toast and build your veggies on top! I started with cucumbers as they make a lovely base to hold things. Then I did my greens, tomato and freshly grated parm. End with a little extra drizzle of olive oil or extra pesto!
