Strawberry Almond Butter Power Smoothie
A fresh start
I recently started on a bit of a smoothie kick and have been venturing to recreate a healthy version of a pb&j. I love this easy recipe because it packs a whole lot into one little smoothie. In the afternoons right about at the 3PM slump, I start getting a bit of a hungry sweet tooth. I’ll try to turn towards things that are on the clean side, like a handful of dried organic mangos, a cup of berries or even a siggi’s yogurt with some honey drizzled over the top. However I always end up still feeling hungry because these snacks all tend to not be very protein-forward.
Enter this smoothie. It’s got the perfect balance of sweetness and hearty protein to either kickstart your day, or get you through a long afternoon. I love packing a few super-healthy hidden ingredients into recipes that I create. Generally for smoothies, I try to always add a few veggies to help balance out sweetness. I always keep frozen cauliflower and frozen zucchini sliced into medallions in my freezer for easy grab and go additions to smoothies. Another hidden smoothie secret is adding a date or two to make your shake sliiiightly sweeter. The trick when adding a date is to soak them in a bit of hot water first. This helps them thaw out and break down easier during blending.
Ingredients
3 large organic strawberries
1 banana
1/4 cup frozen zucchini
1/4 cup frozen cauliflower
1 scoop collagen peptides
1 date
1 tbsp organic almond butter
2 giant cups of almond milk (you might need more depending on how you prefer your consistency)
handful of ice cubes
Blend all ingredients together on high in your blender.
