A Green Juice You'll Actually Want to Drink

Greens, a little zing, and some sweetness.

I've been making this exact recipe for probably close to 6 years now. Yes, I started when this whole "green juice" thing blew up and became the new norm. BUT I must say, I make it a few times a week and its really a game changer. Packed with vitamins and nutrients that jump start your metabolism and power the brain, its a fantastic way to start the day. I make it every other morning - and I make enough for two days. It keeps well for 24 hours. Any longer, and the juice will fully separate and its nourishment won't be as effective. 

4-5 big leafs organic lacinato kale, washed and de-stemmed
1 cup fresh organic spinach
1 whole organic lemon, peeled
healthy hunk of fresh ginger, peeled (I use about a half tablespoon) 
1 whole organic apple cut into pieces (I prefer fuji or honeycrisp) 

Fill your blender with ice cold water. I use a Vitamix and fill it about three quarters of the way full depending on how much juice I'm making that day. Next add the leafs of kale, pushing them to very bottom of the water in the blender. I find that this makes a more liquid-juice as opposed to frothy. Add the spinach, lemon and ginger. Blend at a high speed until completely mixed and appears to be a juice consistency. While this is still blending on high, add in the pieces of apple one at a time. Let the entire mixture blend for another 20 seconds or so and then gradually turn down the speed. This also helps the juice to separate from the froth - making it easier to pour. Sometimes I use a knife while I'm pouring the juice to hold back the frothy top - but if you're into froth, let it flow! Presto - you're all done! I like drinking it from a straw - just easier and it doesn't give me a green mustache! 

Makes 2 - 3 servings depending on how heavy your pour is.
